The Gerbaud is one of the most popular desserts. It should be part of the festive menu every year. The Gerbaud roll is just as tasty as good it looks! If you want to surprise your loved ones with something special, then try this spectacular delicacy.
Ingredients:
- 40 dkg flour,
- 10 dkg sugar,
- 10 dkg fat,
- 1 egg,
- the grated peel of 1 orange,
- 1 package of dry yeast,
- 1 dl lukewarm milk.
Filling:
- 30 dkg walnut,
- 25 dkg peach jam,
- 1 tsp rum extract,
- 1 tbsp honey.
For the chocolate glaze
- 10 dkg butter,
- 4 tbsp sugar,
- 4 tbsp cocoa powder,
- 1 tsp rum extract,
- 4 tbsp water.
Directions
Sift the flour into a bowl, add the sugar and the yeast. Mix it. Add the eggs and the melted fat and the orange peel. Add the lukewarm milk, knead it into a dough and let it rest for 20 to 30 minutes. While the dough is resting, mix the walnuts, the jam and the rum extract with a tablespoon of honey. Divide the dough into two pieces, spread it out and spread the walnut cream on it. Now roll it up carefully. Now it is time to preheat the oven. Switch it on to 180 degrees. Let the roll rest while the oven is heating up. Poke the roll with a toothpick all the way down to its bottom. Bake it for about 20-25 minutes. Put the ingredients of the glaze into a bowl and heat it on a low temperature until the sugar melts and it thickens. When the roll is no longer hot, you can drizzle the chocolate glaze on it.
