Ingredients:
- 3 zucchinis,
- 1 carrot,
- 1 egg,
- 3 tbsp wheat meat,
- 2 tbsp olive oil,
- 2 tbsp unsweetened yogurt,
- salt,
- ground black pepper.
Preparation method:
Wash the zucchinis, cut the tips off, grate them into a bowl, and add salt. Put it aside for 10 minutes, and then squeeze as much moisture as you can out. Add the grated carrot and the spices, mix thoroughly, and set it aside for a couple of minutes. Add the wheat meat and stir it again. In a smaller bowl, whisk together the eggs and the yogurt, and stir it with the zucchini mixture (if the mixture is too wet and soft, add some flour to it). Heat the oil, form pancakes from the zucchini batter, and fry both sides until golden. Serve it warm with garlic sauce. Enjoy it!
